OMG Dark Chocolate Mousse

It’s official.  I have perfected this recipe and it is a hit across the board.  I am sharing this “signature” recipe with you peeps because it BEATS OUT any other dark chocolate mousse you have EVER eaten….I swear!  And it is simple, with very few ingredients, and very little prep time.  And it’s not full of junk, either!  Just simple and darn yummy.  If you plan your meals correctly, you can have one of these every day if you like!!  How amazing is that??  Beats trying to convince yourself that the Skinny Cow ice cream tastes good, or is even good for you.  Have you looked at the ingredient label on those things???

And one more important note!  I have found that it is BEST — when serving this sweet treat to ANYONE for the first time — that you DO NOT tell them the primary ingredient is avocado!  I promise you…they WON”T KNOW until you tell them!!  Kids, adults, picky eaters….DON’T TELL THEM!  Just put on your best smile, call it Dark Chocolate Mousse, and serve it with a spoon.  I promise they will be licking the little bowl CLEAN, thinking you have allowed them to indulge in some fabulously rich and decadent dessert.

Do you need any more reasons WHY you need this recipe in your repertoire??  It’s clean.  It’s simple.  There are no added, artificial, crappy ingredients.  Just fabulous.  And did I mention that it tastes YUMMY?  Enough of that….on to the recipe below!

Dark Chocolate Mousse with Raspberries

Place all of the following ingredients into a food processor (some clients report that it works fine in the blender, too):

2 organic, ripe avocados

1/2 cup unsweetened organic cocoa powder

1/2 cup organic agave nectar

1 teaspoon pure organic vanilla extract

Hold aside:  Organic raspberries for garnish (do not put these in the food processor)

Combine in food processor until smooth, scraping down the sides of the bowl until all the ingredients are well mixed.   Transfer to small individual serving bowls (I use mini-ramekins).  Top with organic raspberries and chill for several hours in refrigerator before serving.  Best served after dinner as dessert…taking in a little healthy fat in the evening is good!  This is ALSO excellent spread on slices of bananas!!  Yum!  But due to the higher carbohydrate profile of bananas, it would be best to save that version for after a great workout.

I ALWAYS double this recipe, and make sixteen little cups of this perfect treat.  Yes, sixteen.  That’s how popular it is!  The entire family, extended family, neighbors and random strangers have all fallen in love with my Dark Chocolate Mousse.  Gotta love having an ace in the hole for special occasions as well as the every day!  Enjoy!

Nutritional Info (this is approximate, because I don’t actually WEIGH the avocados…so this calculation is based on the large avocados I used.  If your avocados are smaller, the calculations will be a bit different):

1 Serving = 2 oz. (Doesn’t sound like much, but it’s the perfect amount!)
